The blade utilises CROMOVA 18 Stainless Steel ice tempered and hardened to Rockwell C56 - 58° which allows it to hold a razor sharp edge longer than any other steel.
Included in the set are - G2, G3, G5, G9, G21, GS1, GS5, S11 & the knife block with dots.
The blades are in 3-ply hardened CROMOVA 18 stainless steel made up of a central core of high hardness to guarantee a rigid blade, surrounded by 2 layers of softer stainless steel, resistant to corrosion. The outer edges of the blade are made from the same steel as the handle making the whole thing even stronger.

Care advice for Global knives:
We recommend cleaning GLOBAL knives by hand with dish soap and hot water. Rinse with clean water and dry with a cloth.
Do not put GLOBAL knives in the dishwasher.
When storing a knife make sure that the blade is not in contact with other metal objects (other knives spoons forks etc) to avoid damage and scratches on blade.
Sharpening Instructions:
A good chef regularly sharpens his knife. Regular use of a whetstone to sharpen your GLOBAL knives will ensure that they retain their razor sharp cutting edge.
Prior to sharpening, place whetstone in water for 5 or 10 minutes to allow the whetstone to absorb sufficient moisture.
Hold the knife so that the blade meets the coarse side of the whetstone at an angle of 10° to 15° then complete the process on the fine side. Sharpening holders are available to ensure the correct angle.
For best results, the front of the blade should be polished about 70% and the back of the blade about 30%. After sharpening, knives should be washed in hot water and then thoroughly dried.
